How to cut cauliflower steak

To make cauliflower steaks, you need about 1 large or 2 medium heads of cauliflower for 6 steaks, or 1 head for 3 steaks. Wash cauliflower before roasting and pat it dry with paper towel or leave it for 30 minutes to dry.

Cut cauliflower into thick steaks for roasting, leaving the stem, which obviously holds the florets. Thick steaks will hold all the sauce and cheese goodness!

If the end of cauliflower stem looks a little brown and dry, you can cut it just a little, so it looks good.

How to make roasted cauliflower Parmesan steak

Whenthe cauliflower steaks are cut, you can start preparing them for roasting.

Generously brush both sides of cauliflower steaks with olive oil, sprinkle with salt and black pepper. You can use any other vegetable oil that you have.

Prepare a baking tray, layered with parchment paper (for easier clean up). You can use an non-stick baking tray without paper, too.

Bake cauliflower steaks about 40 minutes in 410 F / 210 C hot oven. No need to steam or boil cauliflower. Bake until steaks are tender and edges are golden brown.

Don’t worry if it will be slightly under-baked, it’s up to your taste preferences. You can eat the raw steaks, but it’s better to prepare Cauliflower salad instead if you’re short on time.

Meanwhile, prepare the homemade marinara sauce, if you don’t have it. You can also use store-bought marinara. But our homemade sauce recipe is very easy, delicious and healthy.

Remove roasted cauliflower steaks from the oven, add marinara sauce on top. Sprinkle with shredded mozzarella, then Parmesan cheese.

Return the steaks in the oven for 5 minutes until cheese melts. Serve roasted cauliflower Parmesan steak immediately, preferably with fresh basil or parsley on top.

Variation of cauliflower Parmesan

If you don’t want to cut cauliflower into steaks, you can cut it into florets. Put the florets in the baking dish, sprinkle with oil, salt and pepper. Bake about 30 minutes.

Then add marinara sauce, mozzarella and Parmesan. Bake 10 minutes more until bubbly.

I think homemade marinara sauce adds the most flavor to this cauliflower recipe. But you can also add whole garlic to the dish and roast it with cauliflower steaks.

Actually you can be creative and customize cauliflower steak recipe. Add turmeric, tahini or hummus on top instead of marinara, use different cheese.

You can store roasted cauliflower steaks up to 3-4 days in the fridge in the air-tight container. Reheat the cauliflower Parmesan steaks in the oven for about 10-15 minutes or microwave about 2-3 minutes.

If you are into meal planning for the week, I would suggest to store roasted cauliflower steaks without cheese and sauce. Just before serving, add the sauce and cheese on top and reheat as suggested above.
