The combination of poultry, seasoning and vegetables makes it a great low carb dish.

Are cashew keto frendly?

According to Carb Manager External Link , half serving of cashews needed for this recipe  contains 9 carbs. So if you are on a low carb keto diet, be careful with adding too much cashews in your diet. I keep them in a separate box and add to each serving separately.

Ingredients for keto cashew chicken

Chicken. I used chicken breast, cut into smaller pieces. You can use other parts of chicken, but it will impact cooking time and calories.
Oil for frying. I had peanut oil for frying. You can use other vegetable oil instead.

Seasoning. I used salt and pepper to season chicken, while frying. Ground ginger, garlic powder and chili powder are dry seasoning that gets this easy keto chicken dish to another level.

Aminos is a low carb substitute to soy sauce. Liquid aminos is really similar to the soy sauce in taste and look. It is made by fermenting soybeans, some are derived from coconut. It is naturally gluten-free.

Cashews. Just a pinch of cashews will provide the delicious and desirable crunch in your mouth.

Sesame. It is totally optional, but I love serving keto cashew chicken with a sprinkle of sesame seeds.

Marinated peppers. A mix of marinated peppers will add an oomph and flavor. You can use chopped fresh bell peppers instead.

Onion. Chopped onion is a must for almost any delicious and flavorful recipe.

How to make keto cashew chicken

Start frying the chicken on both sides, seasoned with salt and pepper. Set aside to cool, while making the sauce and the vegetables.

Clean the pan on heat another one. Fry cashews on a dry pan for five minutes until browned. Set aside until needed for serving.

Heat more oil in a pan and fry chopped onion.

Add rice vinegar and liquid aminos. Cook on low until it is bubbling and reduced.

Add seasoning and stir together until fragrant.

Finally add chopped marinated or fresh vegetables -peppers. Cook few minutes, stirring together.

Add back cooked chicken and stir everything together in a pan.

Serve with cashews and sprinkle sesame seeds.

  • 2 tbsp peanut oil or other frying oil
  • 50 g cashews
  • 1 tbsp rice vinegar
  • 3 tbsp liquid aminos
  • 2 tsp sesame oil
  • 1 tsp ginger ground
  • 1 tbsp garlic powder
  • 1/4 tbsp chili powder
  • 3 peppers marinated, chopped
  • 1 onion chopped
  • 1 tsp sesame seeds optional
