Easy Zucchini Fritters (Step by Step Recipe)

This breakfast idea is so simple! You will need a large bowl, shredded zucchini, eggs, hard cheese, flour and scallions. Add salt and leave zucchini aside, then mix with and fry for 3 minutes on each side. That’s it, tasty dish is ready!

This is our go to recipe this zucchini season. I also love to tweak this easy recipe and add grated carrot or potato. And every time I make them, they are so delicious!

This is an easy recipe that was one of my favorite childhood summer breakfast or lunch dishes. My aunt used to grow zucchini and we had a lot of them! I actually made them a lot, just mixing zucchini with flour and egg. But over the time, I figure out that adding cheese and scallions takes adds amazing flavor and from now on this is how I make them most of the time.

How to make easy zucchini fritters

First you will need shredded zucchini, hard cheese (such as Parmesan), flour, eggs and scallions. See the step by step process shots below.

Shred zucchini with food processor or with hand grater (picture 1), generously sprinkle with salt and leave aside for 20 minutes (picture 4-5).

While you’re waiting for zucchini to release their juice, your can grate the cheese and chop some scallions (picture 2-3).

Leaving zucchini helps to make healthy fritters crispier and less watery.

Using your hands or sieve, squeeze liquid from zucchini. Don’t miss this step, it is important, so the fritter will remain their shape and won’t fall apart.

By the way, you can use zucchini liquid for soups, cooking vegetables, adding to homemade sauces. You can freeze it in an ice cube mold.

Combine zucchini with eggs and cheese, mix with the flour and add chopped scallions (picture 6-7). Season with freshly ground black pepper.

Heat a little bit olive oil in a pan. These don’t need to be heavy fried! Form fritters with about 2-3 tbsp of zucchini mixture, pressing them lightly into the into rounds. Place them with about 1-2 inches spacing. On a medium heat, cooking time is just 3 minutes for each side – until golden brown (picture 8-9).

Repeat until you have about 9 fritters. You can place them on a paper towel to absorb excess oil. Delicious zucchini appetizers are ready! And of course you can double the recipe, to make more and more.

To my mind, these easy zucchini fritters are best served hot with Greek yogurt, sprinkled with scallions. You can also use sour cream or our tahini recipe for serving.

There is a possibility that these zucchini fritters will be eaten right from the pan, without any topping. Yes, they are so good on their own, but better have some dipping sauce on your hand. By the way, you can try these with our pumpkin dip.

How to store and freeze zucchini fritters

This recipe makes perfect fritters! They are not soggy and won’t fall apart. Moreover, you can freeze them. Place cooled zucchini fritters in a freezing bag and store up to 2 months. Thaw before reheating. Freshly cooked, they  can last up to 4 days in the fridge, if you can keep them for so long.
