So for this oat cookie recipe, you will need old-fashioned rolled oats, very ripe bananas, coconut oil instead of butter and dried cranberries or other dried fruit or chocolate chips.

In a bowl combine oats, bananas, coconut oil. Let the oats soak the moisture from banana and coconut oil, then add dried cranberries.

  • 2 cups oats (old-fashioned/ rolled oats)
  • 2 medium bananas very ripe
  • 3/4 cup cranberries dried
  • 2 tsp coconut oil melted
  1. Preheat oven to 350 F / 180 C. Layer the baking tray with parchment paper.

  2. Mash banana with a fork, add oats and combine together. Add cranberries and coconut oil, mix until combined.

  3. Use your hands to form a small ball from the oat mixture. Place the balls on the tray, leaving a space about an inch in between. Press every ball with your finger to form the cookies.

  4. Bake 15 minutes. Let them cool before transferring to the container.
