Healthy Oatmeal Cookies - Vegan Breakfast Recipe

- 2 cups oats (old-fashioned/ rolled oats)
- 2 medium bananas very ripe
- 3/4 cup cranberries dried
- 2 tsp coconut oil melted
- Preheat oven to 350 F / 180 C.
- Prepare all ingredients. Layer the baking tray with parchment paper.
- Mash banana with a fork, add oats and combine together. Add cranberries and coconut oil, mix until combined.2 cups oats, 2 medium bananas, 2 tsp coconut oil, 3/4 cup cranberries
- Use your hands to form a small ball from the oat mixture. Place the balls on the tray, leaving a space about an inch in between. Press every ball with your finger to form the cookies.
- Bake 15 minutes. Let them cool before transferring to the plate/container.
