What’s great, this apple banana recipe will fill you and give you energy. Apple pancakes are sweet and tasty, so this is good healthy breakfast to pair with morning smoothie, tea or coffee, or whatever you drink. I hope it’s not alcohol, haha! Have a great start of the day!

Also these apple pancakes are packed with flax meal and oat meal. I usually make these at home with old coffee grinder, before making the recipe. Separately grind old-fashioned oats, then linseeds (flax seeds). Keep in mind that flax seed meal has maximum benefits, when freshly ground!

Flax benefits

Flax seeds are great substitute to flour. They contain lignans, which protects against cancer. They also have only healthy fats or omega-3 fatty acids, which helps lower cholesterol. Moreover, flax seeds are great source of fiber, protein, micro and macro elements, as well as natural antioxidants. And of course flax seed will not only give you energy, but also good portion of vitamins A, B1 (thiamine or antineurine), B6 (pyridoxine), F and phytosterols.

Serving apple pancakes

You can serve apple pancakes with vegan sugar free homemade apple sauce. Moreover, you can add honey or yogurt, if you wish so. I also added cinnamon and cardamom for the flavor, so you can add your favorite spices as well such as allspice for fall mood!

By the way, this recipe makes only 5 apple pancakes, but you can double or triple the recipe and prepare your banana oatmeal pancakes ahead. However it is great for one or two servings! Such a simple and delicious breakfast.

How to sweeten apple pancakes

Bananas are naturally sweet and I used sweet apples for the recipe. So despite there is no sugar, these apple cinnamon pancakes are naturally sweet and tasty. That’s so great to have a good healthy breakfast in the morning!

How to store apple pancakes

Store them in the fridge for about 3-4 days to have healthy quick breakfast or snack. Just heat them in the pan in the morning for few minutes or microwave, if it is easier for you.

Ingredients
  • 2 apples
  • 1 banana (ripe)
  • 80 g oat meal
  • 20 g flax meal
  • 1-2 tbsp water
  • 1/8 tsp cinnamon
  • 1/8 tsp cardamom
  • 1 tbsp vegetable oil for cooking

Instructions
 
  • Smash banana with fork. Grate apples. Mix together.
    1 banana, 2 apples
  • Add all other ingredients to the fruits and mix well.
    80 g oat meal, 20 g flax meal, 1/8 tsp cinnamon, 1/8 tsp cardamom, 1-2 tbsp water
  • Add a little bit more water, if the consistency is too dry.
  • Heat the pan with vegetable oil. On a low heat cook 1 tbsp of flattened batter for 2-3 minutes on each side, until browned.

  • Serve and enjoy your healthy breakfast!
