Chocolate & fruits

Who doesn’t love chocolate? This is perfect recipe for chocolate-lover. And it can be paired with any fruits or berries that are in season and not only in winter! I’ve made this one with canned peaches, but it will be also great with other fruits and berries, for example, strawberries, raspberries, cherries, plums, pears, blueberries etc.

Baking chocolate pudding cake

This recipe makes one 7×10 inch / 18×25 cm baking tray. And the baking time is optional! The less time it will be in the oven – the more soft pudding you have, the more you bake it (but be careful, don’t burn it) – it will be more firm like pie.

Few words about Skyr

Skyr is sour and thick yogurt, great to accompany sweet desserts. And it is healthy and full of protein (11 g of protein per 100g). If you can’t find skyr in your local store, don’t worry, this chocolate pudding cake will be perfect with ice cream too!

Perfect recipe for cold winter time. It is moist, chocolaty with juicy peach halves.

Ingredients
  • 4 eggs
  • 150 g butter
  • 160 g sugar confectioner’s
  • 60 g flour all-purpose or spelt
  • 40 g cocoa powder good quality
  • 6 peach halves canned
  • 8 squares dark chocolate
  • 1 tsp coconut flakes to sprinkle
Instructions
  1. In a bowl whisk the eggs.

  2. In a sauce pan on the low heat melt butter. 

  3. Remove the pan from heat and stir in sugar.

  4. Gradually add the egg mixture into the pan with butter and sugar, stirring frequently. 

  5. Stir in the flour and cocoa until well combined. 

  6. Transfer the mixture into the greased baking tray.

  7.  Sink in peach halves and chocolate squares.

  8. Bake about 40 minutes in the 340 F / 170 C hot oven until cooked.

  9. Sprinkle with coconut flakes and serve hot with skyr or ice cream.

Recipe Notes

Additionally, you can serve it with Greek yogurt, Skyr or ice cream.
