This is homemade granola recipe with dried fruit, almond, coconut oil and golden syrup. Simple breakfast idea that you can always have on hand in the pantry.
How to make homemade granola recipe (healthy breakfast recipe)
The ingredients for homemade granola:
- oats (rolled oats for the best results)
- crushed or flaked nuts and seeds (almond flakes, crushed peanuts or hazelnuts; pumpkin seeds or chia)
- optional additions (dried coconut, cocoa nibs)
- dried fruit (raisins, cranberries, dried apricots etc.)
- ground spices such as cinnamon, cardamon, cloves
- fat (coconut or other vegetable oil)
- syrup (golden syrup, maple syrup, sugar-free golden syrup, honey)
First of all, you will need oats. Use old-fashioned rolled oats as a base. Don’t use quick oats for this recipe, as the time and method will be different. Choose good quality rolled oats for this easy breakfast recipe.
Mix all the dry ingredients – oats, desiccated coconut, crushed or sliced nuts. I used almond slices. It will have a lovely crunch! I also add a half teaspoon of ground cinnamon to the oat mixture.
To “glue” everything together, you need a golden syrup for vegan version. This is what holds granola together. Make homemade granola with honey for vegetarian breakfast. To make a healthy recipe with granola, use sugar-free golden syrup or maple syrup instead.
Also for the perfect toasty granola you need to add fat such as coconut oil or any other oil you prefer.
Add half a cup of dried fruits, such as cranberries, raisins, chopped apricots – whatever you have and like! Fruity notes are so good in this easy healthy granola. You can add cocoa nibs, pumpkin seeds or experiment with other additions.
How to cook granola
Bake granola for about 10-14 minutes until golden. Don’t forget to stir at least two times during the baking, so it bakes evenly. You can also rotate the pan, after stirring the granola.
I use a non-stick baking pan that is 7 x 10 inch / 18 x 25 cm large.
If you over-bake the granola, it will turn brown and bitter, so watch it carefully. It should be golden and crunchy. So don’t wait too long, it will become crispier after cooling.
How do you know the granola is ready? Your kitchen will smell amazing and granola looks golden brown and dry. And one of the best healthy breakfast recipes is ready in just 20 minutes, including the prep time!
Storing granola and how long does homemade granola last
After baking let the granola cool completely before transferring to the storing tray. I like to store it at room temperature, in the airtight container or glass jar with a lid.
Homemade granola lasts about 2 months. I haven’t tried to store it longer, as it tends to be gone too quickly in our house! Then I just make another batch with a different twist, like using other dried berries.
Don’t store granola together with yogurt, because it will become soggy and loose crunchiness. And you don’t want that!
How to serve granola – easy breakfast ideas
The best way is to make yogurt parfait. Put couple tablespoons of vegan coconut yogurt or Greek yogurt in a bowl, sprinkle couple teaspoons of granola on top and add defrosted mix of berries. Easy and healthy breakfast for any family member!
This is one of the easy breakfast ideas for those who doesn’t love porridge in the morning (like me, haha). Healthy granola is a great way to add some oats in every day menu!
I love the combination of creamy yogurt, crunchy granola and juicy berries on top! I always have some berries in the freezer, so I can easily defrost them in the morning, using microwave or in a small pot on the stove.
You can also leave berries to defrost overnight in the fridge! If you don’t have frozen berries, you can buy fresh seasonal produce. Add banana slices or more dried fruits and maybe chocolate drops on top!
The serving size depends on your preferences. This granola recipe is enough for two people for a whole week of easy breakfasts.
Granola and yogurt pots are delicious healthy breakfast for the whole family!
