Fresh or dried apricots for chicken apricot sauce
I used fresh apricots to make homemade apricot jam. You can use a store-bought jam or preserves for this sauce recipe. But check the amount of sugar, as it will be much sweeter. In this case you don’t need to use honey to make this chicken recipe.
We recommend our homemade apricot jam recipe for making apricot sauce for the chicken! It is much healthier and sugar-free. This is a perfect use of fresh apricots!
If you wish, you can add 1/2 cup of dried apricots to the chicken before baking. It will add a pleasant sweetness to the final dish.

Apricot chicken glaze or apricot sauce
To make apricot sauce combine a cup of homemade apricot jam with soy sauce, dried garlic and ginger, Dijon mustard. If your apricot preserves are too thick, add water to loosen the sauce.
I don’t use onion soup mix in this recipe. I use dried garlic and ginger instead. It adds more flavor to the final dish.
Add black pepper to your taste. Keep in mind that after baking apricot sauce will be more flavorful and thick.
Pour the sauce or glaze on chicken breasts.
Cooking apricot chicken
Bake the chicken until it is ready, about 40-50 minutes, depending on the size of chicken breasts. The oven should be preheated to 375 F / 190 C. If your chicken breast are smaller, you might need only 30-40 minutes until it’s ready.
This apricot chicken can be prepared with several cooking styles. You can also grill or fry it on the pan instead. Add oil or butter to your pan and grill or fry 10 minutes on each side. Use your instant pot to cook the apricot chicken for 25-30 minutes.
If you have food thermometer, you can check the temperature of the breast, it should be ready 165 F / 74 C.
Let the glazed apricot chicken rest 10 minutes before serving.
Can the dinner be easier than that?
