Pasta with mushrooms and tomato is one of our favorite dinners. Penne pasta is covered with mushroom sauce, with juicy tomatoes on top. Quick, Easy and Delicious Dinner!
Scoop out the liquid part with seeds of tomato and discard it. Chop the tomato.
1 tomato
Heat pan with olive oil. Add chopped tomato and basil, cook for 5 minutes, stirring until softens.
1 tomato, 1 tbsp olive oil, 1 tsp basil
Meanwhile set a pot with salt and water to boil.

Remove cooked tomatoes and leave aside in a bowl.
Add more olive oil to the pan, if needed. Add chopped mushrooms, shallot and cook on medium heat, stirring, until browned, for about 10 minutes. Add salt, pepper, tarragon, while cooking.
1 tomato, 230 g mushrooms, 1 shallot, ½ tsp salt, 1 tsp black pepper, 1 tsp tarragon
When your water is boiling, add a teaspoon of salt, then adjust the heat to medium and cook pasta for 8 minutes or as instructed on the package.
4 handful penne rigate pasta
After mushrooms are cooked, add a cup of milk and stir in flour. Cook on small heat, stirring for 4 minutes, until slightly thickened and bubbling. Taste and add more salt or pepper, if needed.
1 cup milk, 1 tbsp flour
When your pasta is cooked, drain it in colander and add to a pan. Stir the pasta with sauce for about 1 minute.
Remove from the heat and serve pasta with mushroom sauce. Stir in cooked tomatoes, add grated cheese, chopped dills and Italian seasoning on top.
