Instructions
Peel and chop all the vegetables. Mince garlic and set aside.
1070 g carrots,
2 cloves garlic,
2 small onions
In a big heavy bottom pot heat oil, add chopped onions, chili flakes and turmeric. Stir few seconds, add chopped garlic and grate ginger.

10 g ginger root
Add chopped carrots, bay leaves and cover with water. Cover with a lid and bring it to the boil.

Add salt and pepper.

Simmer
20 minutes
on a medium low heat. Add lemon juice. Check if the carrots are cooked through and remove from heat.

Let the soup cool a little, then transfer to a blender or use hand blender to make a smooth soup. Add more salt and pepper to taste, if needed.
