Healthy Oatmeal Cookies - Vegan Breakfast Recipe
Make these cookies ahead of time to have a healthy snack between the meals! These banana oat cookies are so good for breakfast, too.

(old-fashioned/ rolled oats)
Preheat oven to 350 F / 180 C.
Prepare all ingredients. Layer the baking tray with parchment paper.
Mash banana with a fork, add oats and combine together. Add cranberries and coconut oil, mix until combined.
Use your hands to form a small ball from the oat mixture. Place the balls on the tray, leaving a space about an inch in between. Press every ball with your finger to form the cookies.
Bake 15 minutes. Let them cool before transferring to the plate/container.
Store in the fridge covered up to 5 days.
