Instructions
Cut cauliflower into florets and finely chop it. Leave half of chopped cauliflower aside.
Heat the pan on medium. Add half of cauliflower and water. Cook, stirring for few minutes until soften. Leave aside to cool.
Chop onion and parsley (only leaves), cut tomatoes in half and place vegetables in a bowl. Add olives.
Peel and remove pit from avocado, cut it into small cubes, add to the salad bowl.
Add salad leaves.
Finally add both raw and cooked cauliflower to the salad.
Juice half of the lime, add salt and pepper and drizzle the salad. Mix everything with a spoon.
