Easy baked apricot chicken recipe is sweet and sour main meal. It can be a regular healthy dinner idea or served for holidays. Serve it with barley, rice or vegetables.
Add garlic, ginger and black pepper to your taste.
1 tsp dry ginger powder, 1 tsp dry granulated garlic, ½ tsp black pepper
Mix all apricot sauce ingredients.
Put chicken breasts in a baking pan. Glaze the chicken and pour all the sauce on top.
3 chicken breasts
Bake chicken for about 40 minutes.*
Serve with barley or other side dish and sprinkle chopped parsley on top.

*Baking time depends on the size of chicken breasts. If you have food thermometer, you can check the temperature of the breast, it should be ready at 165 F / 74 C.Store baked apricot chicken in air-tight container in the fridge for 4-5 days. You can freeze apricot chicken up to 3 months.
