This avocado bun burger is ultimate healthy snack.

Perfect for every day  lunch, discard all the bread buns for this snack, packed with veggies. 

So what’s in this easy avocado burger? 

 Vegetable pattie with vegetables, leaves and avocado buns. Simple, but delicious.

Lets make Flax egg and pattie: To make flax egg, mix flax meal with water and leave it for 15 minutes.

Put all ingredients for veggie pattie in food processor (or grate all vegetables) and pulse until grated.

Mix with flour, spices and flax egg (1/8 tsp salt, 1/8 tsp black pepper, 1/4 tsp turmeric, 1/8 tsp cayenne, 1/2 tsp marjoram, 2 tbsp whole wheat flour) 

This is such an easy recipe, you will need to make a pattie, which is so simple and tastes very good!

Heat olive oil in a pan. Divide the mix into 2 balls. Press them with your hand to make a  pattie and cook in a pan for about 2 minutes on each side until golden brown.

While vegetable pattie is cooking slice four mushrooms. Then remove the patties from a pan and let them cool.

Cook the sliced mushrooms in the same pan for about 10 minutes, stirring until golden brown. Divide into 4 parts and let them cool.

You can really eat this vegan food for breakfast or lunch. Don’t be  afraid of high amount of calories – mostly from avocado fats.

Now lets cut avocados in half, remove the pit and skin. Place one half of avocado with the hole up. 

Slightly cut the bottom of avocado so it can stand straight. Put 1/4 mushrooms in the hole of avocado, where the pit was.

Put two slices of tomato, and then put a salad leaf on top (tier the leaf, if it’s too big for the bun).

Put vegan pattie on the leaf and drizzle it with BBQ sauce. Thinly slice cucumber (lengthwise) and put 1/2 on the pattie.

Now cut an orange bell pepper and put 1/2 on the cucumber slices. Then put 1 iceberg salad leaf on top.

Add another part of mushrooms in avocado hole and cover the burger. Then, slightly press the burger bun.

And now sprinkle sesame seeds on top of the bun. Repeat all the previous steps, assembling second burger.
