How to make cauliflower salad

All you need is love.. and some vegetables. Not only a head of cauliflower, but you will also need red onion, cherry tomatoes, parsley, salad leaves and olives.

Definitely use only fresh vegetables, no frozen cauliflower in this salad bowl!

Do you know the vegan version of Feta cheese? Avocado! Well, just kidding, but avocado is a good addition to vegan cauliflower salad.

You will also need lemon and some salt and pepper to make an easy dressing.

To make this vegan, low carb, keto (type here your diet) salad, I used one head of cauliflower. Cut it into small florets and finely chop or use a food processor. I just roughly chopped cauliflower with a knife.

By the way, cooked cauliflower rice is a great side dish.

Leave half of riced or chopped raw cauliflower aside. Toss another half with a bit of water in a hot pan for few minutes. Leave to cool before mixing with other ingredients. If you wish to make it only raw vegan cauliflower salad recipe, just skip this step. But I love the combination of soft and crunchy cauliflower in one dish. I also wanted to incorporate some roasted cauliflower, but decided it will be too much work for an easy salad recipe.

Other vegetables you need for this vegan Mediterranean salad are half of the red onion, parsley, cherry tomatoes. Chop onion and parsley, halve tomatoes and place them in a bowl.

Feta is often used for Mediterranean cuisine, but we will use avocado for this vegan cauliflower salad. Remove skin and pit and cut avocado in small cubes, add to the salad. Add a handful of green or black olives and salad leaves such as baby rocket, spinach etc.

Finally add both raw and cooked cauliflower to the salad bowl. The dressing should be just a touch, so I juiced half of the lemon. Add salt and pepper, mix the salad with the spoon. You can also add minced garlic in the end.

Ingredients
 
 
  • 1 small head cauliflower
  • 2 tbsp water
  • 10 olives
  • 1/2 red onion
  • 3 springs parsley
  • 1 handful mixed salad leaves (rocket, spinach, etc)
  • 1/2 lime juiced
  • 8 cherry tomatoes
  • 1 avocado
  • ¼ tsp salt
  • ¼ tsp pepper ground

Instructions
 
  • Cut cauliflower into florets and finely chop it. Leave half of chopped cauliflower aside.
    1 small head cauliflower
  • Heat the pan on medium. Add half of cauliflower and water. Cook, stirring for few minutes until soften. Leave aside to cool.

  • Chop onion and parsley (only leaves), cut tomatoes in half and place vegetables in a bowl. Add olives.
    1/2 red onion, 3 springs parsley, 8 cherry tomatoes, 10 olives
  • Peel and remove pit from avocado, cut it into small cubes, add to the salad bowl.
    1 avocado
  • Add salad leaves.
    1 handful mixed salad leaves
  • Finally add both raw and cooked cauliflower to the salad.
  • Juice half of the lime, add salt and pepper and drizzle the salad. Mix everything with a spoon.
    1/2 lime, ¼ tsp salt, ¼ tsp pepper

      The serving is about 4 plates of salad (the gray one you see in the photo is about 7,5 inch/ 19 cm large).
