There is a little bit more effort to make the crust, but it is worth trying! I cooked cauliflower in water, then drained all the liquid. This method allows to cook cauliflower all through evenly and it won’t dry out in the oven. The crust is soft and moist, but it holds topping well.
I found that cauliflower pairs well with tomato sauce, mushrooms, pepper and arugula. It’s a more healthy way to enjoy your pizza. Moreover, it may be even more delicious! It is great to replace your regular pizza and surprise your guests with this cauliflower pizza crust. It will end up fast and they will ask you for the recipe.

- 1 cauliflower
- 2 eggs
- ½ cup mozzarella shredded
- 1 ball mozzarella sliced
- 2 tbsp hard cheese + extra for grating
- 2 tbsp Italian seasoning
- 2 tbsp flour all-purpose or spelt
- 100 g mushrooms sliced
- 1 sweet pepper sliced
- 1 handful arugula leaves
- 4-5 tbsp tomato sauce or tomato paste
Cut the cauliflower into florets and place them in your food processor and chop until they remind rice. You should end up with 2 - 3 cups of finely chopped cauliflower.
In boiling water, put your cauliflower rice, and let it simmer for about 4 minutes until it’s soft and tender, stirring.
Prepare a clean cheesecloth and a bowl. Place there all your cooked strained cauliflower and try to squeeze as much liquid as you can.
Add flour, Italian seasoning, 2 tbsp hard cheese and shredded mozzarella to dry cauliflower. Mix together until everything is combined and smooth. Add 2 eggs to the mixture and stir well again.
Prepare a baking tray lined with a parchment paper and put cauliflower crust mixture. Next, shape your cauliflower pizza base.
Put your favorite tomato sauce on the pizza base. Then put mozzarella slices, mushrooms and sweet pepper. Put the arugula on top of the vegetables and grate some hard cheese.
Bake for about 20 minutes 425 F / 220 C and your delicious and healthy pizza is ready for serving!
