How to make easy cheesy hashbrown casserole

You will need hashbrowns, mushrooms, stock and cheese. To add more flavor to this casserole with hash browns I used rosemary, scallions, salt and pepper. All the ingredients are placed in layers in casserole pots, filled with vegetable stock.

You can also make hash brown casserole with fresh potatoes. Coarsely grate the potatoes and use as a hash browns! We’ve made this version and I would suggest to bake it 10 minutes more.

This is a cheesy hashbrown casserole without sour cream, without eggs and without meat. Cheese is optional too, you can make it vegan, if you wish so. To my mind, cheese makes this dish much better, combined with flavors of scallion and mushroom.

I used mozzarella and vegetarian hard cheese. You can also mix hash brown potatoes with cream cheese. Cheesy hashbrowns are so delicious!

If I was on a desert island and needed to choose one food (not dish) to take with me… I would probably choose cheese!

How to make your own hash browns

If you don’t have hash brown in your freezer, you can make your own! Choose waxy potatoes such as Yukon Gold, wash and peel them. Coarsely grate the potatoes. Blanche them in a boiling water for 5 minutes to stop them from browning. Drain well, cool and freeze in a plastic bag or freezer-safe containers.

You can use them immediately for this cheesy hash brown potato recipe or freeze.

Store homemade hash browns for up to 3 weeks in a freezer. After that they will loose the texture and flavor.

Before using frozen hash browns, thaw them in the fridge or cook them on a hot pan for 5-8 minutes, stirring.

Storing and freezing hash brown casseroles for breakfast or dinner

Don’t forget to defrost hashbrown before using in this recipe and remove excess liquid, otherwise it can be too soggy. If you don’t have frozen hashbrowns, you can peel and shred 3 potatoes for this recipe.

Cooked hashbrown casserole lasts up to 5 days in the fridge, uncooked – up to 2 days. You can reheat it in the oven.

Moreover, it is possible to freeze this hashbrown casserole up to 3 months. You can make ahead breakfast casseroles and freeze them after they are cooled. As there are no eggs, you can also freeze it before you bake it.

I recommend to put in the fridge first frozen breakfast casseroles for about 20 minutes (if they’re small), then place in a cool oven and cook in 356 F / 180 C temperature for an hour or less (watch until potatoes are brown and cheese melts.

And you can double/triple the recipe to fill a bigger breakfast casserole dish.

Ingredients
 
 
  • cups shredded potatoes* or hash browns
  • 2 scallions
  • 1 ⅛ cup mozzarella ball
  • 2 tbsp hard cheese shredded
  • 1 rosemary stalk
  • 3 mushrooms
  • 1/3 cup stock**
  • 1 tsp butter for greasing
  • 1 parsley stalk for serving optional
  • ½ tbsp salt

Instructions
 
  • Preheat the oven to 356 F / 180 C.
  • Salt the hash brown potatoes, mix with chopped scallions and rosemary (remove the stalk). Grease casserole pots with butter and fill them with ½ of potato mixture.
    1½ cups shredded potatoes*, 2 scallions, 1 rosemary stalk, ½ tbsp salt, 1 tsp butter
  • Chop the mushrooms and place on top of potatoes.

  • Add stock to both pots.
    1/3 cup stock**
  • Shred the mozzarella ball and mix it with hard cheese.
    1 ⅛ cup mozzarella ball, 2 tbsp hard cheese
  • Add ½ of cheese on top of the pots.
  • Place all the rest of hash brown to the pots and shredded cheese on top.
  • Put in the oven, covered with the lid or foil. Bake 30 minutes until potatoes are cooked and cheese melted.
  • Let the casserole cool a little before serving. Serve with chopped parsley on top.

* To make your own hash browns for this casserole recipe, wash and peel 3 small potatoes. Coarsely grate them and leave in a freshly boiled bowl of water for 5 minutes. Drain well. Then follow the instructions. Bake for 8-10 minutes more.
** Choose stock to your taste. You can use vegetable or chicken stock.
